- You will need the following :
2 cup water
1 cup yellow cornmeal
1 16-oz. can pureed pumpkin
1 spoon. sugar
2 spoon creamy, natural peanut butter
1/2 spoon salt
1 lb. fresh spinach, washed, stems removed
- cooking:
.. In a medium saucepan, boil the water.
.. Add cornmeal and stir
.. Reduce heat to a simmer.
.. Cook for about 10 minutes, stirring often, until mixture thickens.
.. Add pumpkin, sugar, peanut butter, salt and mix thoroughly.
.. Remove from heat and serve with fresh spinach on the side.
